Bonnie & Wild: Our Mission & Purpose

At Bonnie & Wild, we work to champion Scotland's high quality food and drink in our accessible and welcoming venue, partnering with dedicated local producers to ensure sustainable sourcing that nourishes our communities.

At Bonnie & Wild we believe passionately in championing and providing for our community. We work to do this by promoting sustainability and reducing environmental impact, creating local jobs and supporting our local economy, and a deep commitment to provenance and sourcing locally from independent quality producers. We're committed to this in a number of ways.

Bonnie & Wild is committed to reducing our environmental impact. We will achieve this by:

  • Reducing our water usage by 5% annually

  • Reducing our energy consumption by 5% annually

  • Reducing the amount of landfill waste relative to the amount of recyclable waste

  • Ensuring at least 80% of our suppliers are local, reducing the impact of transportation.

Bonnie & Wild is committed to creating local jobs and supporting the local economy. We will achieve this by:

  • Recruiting locally exclusively
  • Ensuring at least 80% of our suppliers are local, with annual surveys to better gauge the economic impact of working with Bonnie & Wild.
  • Supporting local charities exclusively.

Bonnie & Wild is committed to demonstrating clear provenance to guests and sourcing locally from independent quality producers. We will achieve this by:

  • publishing all concessions’ supplier information on website to give 100% transparency on the products available at Bonnie & Wild
  • ensuring at least 80% of our suppliers are local and take regular audits of accreditation and quality marks
  • ensuring that 80% of our Meet the Makers, Bar Takeovers, Product Launches, etc, are with local producers.

Proudly Scottish: Our Commitment to Championing Scotland’s Food and Drink Producers and Serving our Local Communities

Sourcing policy

Bonnie & Wild seeks to champion Scottish independent food and drink producers, as well as other service/product suppliers. As a business, we have a formal target of more than 75% of the products sold within Bonnie & Wild are sourced from local suppliers. Currently, this figure is above 95%.

We list the many suppliers that we and our various kitchens and retailers source from. You can find this information here.

Serving the Local Community

Bonnie & Wild is committed to supporting our local communities. We are committed to purchasing at least 50% of our core products from local independent suppliers. As a business serving the heart of Edinburgh, we seek to serve at least 75% local and independent clients or customers.

With a narrow local focus, Bonnie & Wild serves the Central Belt of Scotland: Glasgow and Edinburgh and surrounding communities. But as a business overall committed to championing Scotland’s independent food and drink producers, our wider local focus is for the whole of Scotland, including the Northern Isles, Western Isles, Highlands, Fife, Grampian and Borders.

Each year we will publish an Impact Report that will chart our progress in these areas, highlighting successes and identifying areas for improvement.
